With Thanksgiving this week, we are grateful for so many blessings. We are grateful for our health, our family, the healthy foods we feed our family, and you - our Kakadoodle community! Thank you for your continued support.

If you are scheduled for a delivery this week, we will be dropping off on Wednesday instead of the normal Thursday. That way you'll have your eggs ready for prepping the day before.

One of the best ways to ease into Thanksgiving is to prep your breakfast the night before with this Overnight Breakfast Casserole. Then when you get up Thanksgiving morning, with your Infusco coffee, all you have to do is pop it in the oven while you sit cozy with your family watching the Macy's parade or football games.

Overnight Breakfast Casserole

Ingrdients

  • 1/2 lb. bacon
  • 1/2 cup onion, chopped
  • 1/2 green pepper, chopped
  • 12 eggs
  • 1 cup milk
  • 1 - 16 oz. package frozen hash brown potatoes, thawed
  • 1 cup cheddar cheese, shredded
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. Cajun seasoning

Directions

  1. Place bacon on a foil covered baking sheet. Bake bacon for 20 minutes until crispy. Remove bacon and drain on paper towels. Reserve 2 tbsp. drippings. Crumble bacon.

  2. Sauté onion and green peppers in bacon drippings until tender. Remove with slotted spoon.

  3. In a large bowl, whisk eggs and milk. Stir in hash browns, cheese, salt, pepper, Cajun seasonings, onions / peppers and bacon.

  4. Transfer to a greased 13 in. x 9 in. baking dish and top with more cheese. Bake uncovered for 45 minutes, or until a knife inserted near the center comes out clean.
