These muffins are a sweet, guilt-free treat your body will thank you for. Packed with real fruit, natural sweetness, and a dose of fiber and protein, they’re perfect for breakfast on the go or a wholesome snack. Even better? They use ingredients you can feel good about—chemical-free, locally sourced, and nutrient-dense.

Ingredients (makes 12 muffins)

  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 cup unsweetened applesauce
  • 2 Pasture Raised Eggs (or 2 flax eggs for vegan)
  • 1/4 cup Local Honey or Maple Syrup
  • 2 tsp vanilla extract
  • 1 1/2 cups oat flour (or almond flour/oat mix)
  • 1/4 cup unsweetened cocoa powder
  • 1 scoop chocolate or vanilla protein powder (optional)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • Optional: 1/2 cup diced apple pieces or dark chocolate chips

Instructions

  1. Preheat oven to 350 °F. Line or grease a 12-cup muffin tin.
  2. In a large bowl, whisk together bananas, applesauce, eggs, honey or maple syrup, and vanilla.
  3. In another bowl, mix oat flour, cocoa powder, protein powder (if using), baking soda, baking powder, cinnamon, and salt.
  4. Fold dry mix into wet ingredients until just combined. Stir in diced apple or chocolate chips if using.
  5. Divide batter evenly among muffin cups.
  6. Bake for 18–22 minutes or until a toothpick comes out clean.
  7. Let cool for 5–10 minutes before removing from pan.
