Bison Stew
- 1 lb. bison stew meat
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 large onion, chopped
- 6 baby carrots, peeled and diced
- 2 celery stalks, diced
- 3 [potatoes]https://kakadoodle.com/shop/product/Potato%20-%20Fingerling, peeled and diced
- 2 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf

In a large pot, heat the olive oil over medium-high heat. Add the bison stew meat and cook until browned on all sides.

Add the garlic, onion, carrots, celery, and potatoes to the pot and cook for 5-7 minutes, until the vegetables start to soften.

Add the beef broth, salt, pepper, tomato paste, thyme, and bay leaf to the pot. Bring to a boil, then reduce heat to low and simmer for 1 1/2 to 2 hours, stirring occasionally, until the meat is tender and the vegetables are cooked through.
