Breakfast Casserole
Ingredients
- 1/2 lb. bacon
- 1/2 cup onion, chopped
- 1/2 green pepper, chopped
- 12 eggs
- 1 cup milk
- 1 - 16 oz. package frozen hash brown potatoes, thawed
- 1 cup cheddar cheese, shredded
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. Cajun seasoning
Directions
Place bacon on a foil covered baking sheet. Bake bacon for 20 minutes until crispy. Remove bacon and drain on paper towels. Reserve 2 tbsp. drippings. Crumble bacon.
Sauté onion and green peppers in bacon drippings until tender. Remove with slotted spoon.
In a large bowl, whisk eggs and milk. Stir in hash browns, cheese, salt, pepper, Cajun seasonings, onions / peppers and bacon.
Transfer to a greased 13 in. x 9 in. baking dish and top with more cheese. Bake uncovered for 45 minutes, or until a knife inserted near the center comes out clean.
