There’s something deeply satisfying about a warm, hearty fajita bowl on a busy weeknight. Even better when you know it’s packed with clean, locally sourced ingredients from Kakadoodle. This Crockpot Chicken Fajita Bowl recipe is brimming with flavor and nourishment—without the synthetic additives that are often hidden in processed meals.

🍗 Ingredients (Serves 4)
- 2 lbs boneless, skinless Chicken Breasts
- 1 packet low-sodium taco seasoning (or 2 tbsp homemade)
- 1/2 cup chicken broth
- 1/2 cup salsa
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 1 tbsp olive oil
- 2 cups cooked Brown Rice (or cauliflower rice)
- 1 avocado, sliced
- 1–2 limes, cut into wedges
Optional Toppings:
Fresh Cilantro Mirrogreens, Yogurt, shredded Lettuce - salad mix, salsa, Tajin or chili lime seasoning
🥣 Instructions
1. Prep the Slow Cooker
Place chicken breasts in the crockpot. Sprinkle taco seasoning evenly over the top.
2. Add Veggies
Layer in the sliced peppers and onions. Drizzle with olive oil.
3. Cook
Cover and cook:
- On LOW for 4–5 hours
- Or HIGH for 2–3 hours
Until the chicken is tender and shreds easily.
4. Shred Chicken
Remove the chicken, shred it with two forks, then return it to the pot and stir to combine with the veggies and juices.
5. Assemble Bowls
In each bowl, layer the following:
- 1/2 cup cooked brown rice
- Hearty scoop of chicken fajita mixture
- 1/4 sliced avocado
- Squeeze of fresh lime juice
Top with your favorite extras like cilantro, salsa, or Greek yogurt.
