Ingredients

  • 2 lb Ground Chicken
  • 1/4 cup Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt, garlic powder, and onion powder
  • 3 local eggs
  • 1/2 cup pizza sauce (look for one with no added sugar)
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a muffin tin using avocado or olive oil.
  2. In a large bowl, combine the ground chicken, Parmesan, Italian seasoning, eggs, salt, garlic, and onion powder.
  3. Divide the mixture evenly into 6–8 muffin cups, pressing it up the sides to form a "cup."
  4. Bake for 10–15 minutes until the chicken is mostly cooked and firm to the touch.
  5. Spoon about 1 tablespoon of pizza sauce into each cup and top with shredded mozzarella.
  6. Return to the oven and bake for another 12–15 minutes, until the cheese is bubbly and golden.
  7. Let cool slightly before removing from the pan. Sprinkle with extra Parmesan if desired.
