Looking for a high-protein, low-carb twist on a classic comfort food? These Chicken Ranch Pizza Cups are the perfect grab-and-go meal or snack. Made with real, wholesome ingredients like locally sourced ground chicken and eggs, they’re packed with flavor and goodness—without any of the chemicals or additives you'd find in store-bought options. Serve them over zucchini noodles for an extra veggie boost, or enjoy them on their own. Great for meal prep and family-friendly!
Ingredients:
- 2 lbs Kakadoodle Ground Chicken
- 4 Pasture Raised Eggs
- ½ cup grated Parmesan
- 2 tbsp ranch seasoning (no sugar added)
- 1 tsp garlic powder
- ½ tsp sea salt
- ⅔ cup pizza sauce (no added sugar)
- 1 cup shredded mozzarella cheese
Instructions:
- Preheat your oven to 375°F. Grease or line a 12-cup muffin tin.
- In a large bowl, mix together the ground chicken, eggs, Parmesan, ranch seasoning, garlic powder, and sea salt.
- Divide the mixture evenly into the 12 muffin cups, gently pressing into each to form a cup shape.
- Bake for 15 minutes.
- Remove from oven and top each cup with 1–2 teaspoons of pizza sauce and a sprinkle of mozzarella.
- Return to oven for 5–7 more minutes, until the cheese is melted and bubbly.
- Let cool slightly before serving. Store extras in the fridge or freezer for later!
- Optional: Serve over sautéed zucchini noodles for a full meal.
