🍞 Ingredients
- 4 ripe bananas, mashed
- 1½ cups Cottage Cheese, blended smooth
- 3 Pasture Raised Eggs
- ⅓ cup coconut oil, melted
- ½ cup Local Honey
- ¼ cup monk fruit baking blend
- 2 cups Einkorn Flour
- 1½ tsp baking powder
- ½ tsp baking soda
- 1½ tsp cinnamon
- ½ tsp salt
👩🍳 Directions
- Preheat oven to 350°F. Line or grease a loaf pan.
- Blend cottage cheese until smooth.
- In a large bowl, whisk together bananas, cottage cheese, eggs, coconut oil, honey, and monk fruit.
- In a separate bowl, combine einkorn flour, baking powder, baking soda, cinnamon, and salt.
- Fold dry ingredients into the wet mixture until just combined — do not overmix.
- Pour into the prepared pan and smooth the top.
- Bake for 50–60 minutes. If browning too quickly, cover loosely with foil.
- Let cool in the pan for 20 minutes before slicing.
