This time of year is always a bittersweet. The changes to our schedules remind us that summer is fading and fall is approaching. As farmers, we are always busy with planning ahead for the weather changes. At Kakadoodle, we have to be particular mindful of time as we transition our new 74-acre farm from conventional farming to regenerative agriculture. PRODUCT HIGHTLIGHT: Cabbage

As the Midwest enters the peak of the growing season, we are brimming with a bounty of seasonal crops, with cabbage taking center stage.

Not only is cabbage versatile and delicious, but it's also incredibly beneficial for your health. Packed with fiber, cabbage supports digestion and promotes a healthy gut microbiome. Its high levels of vitamins C and K provide essential nutrients for your immune system and bone health. Additionally, cabbage's anti-inflammatory properties and potential to protect the stomach lining make it a powerhouse vegetable worth savoring this season.

Here are some great ways to enjoy cabbage:

  • Stuffed Cabbage Rolls: you can use ground beef and rice, or substitute ground chicken like we do in our recipe below!

  • Coleslaw: finely shred the cabbage and mix with carrots and your favorite dressing to use as a side dish or a topping for your fish tacos!

  • Southern Fried Cabbage: this is a delicious side dish that uses the flavors of sautéed bacon, onions and garlic to fry the cabbage in.

  • Cabbage Soup: this detox soup is great for cleansing your body of excess liquid and toxins.

  • Cabbage & Sausage Skillet: this savory dish is easy to whip up on the skillet or flat-top grill.

  • Sauerkraut: make your own powerful probiotic food by finely slicing the cabbage and fermenting with salt.

FEATURED RECIPE: Chicken Stuffed Cabbage Rolls

Adapted from AllRecipes.com

  • ⅔ cup uncooked white rice
  • 1 ⅓ cups water
  • 1 large head cabbage
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 1 ½ pounds ground chicken
  • 2 eggs
  • 4 cloves garlic, pressed
  • salt and ground black pepper to taste
  • 1 pinch dried marjoram
  • 2 (8 ounce) cans tomato sauce
  1. Preheat the oven to 375 degrees F. Grease a 9x13-inch baking dish.
  2. Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes. Allow rice to cool slightly.
  3. Meanwhile, bring a large pot of water to a boil. Remove the core from the cabbage, and place cabbage in the boiling water. Remove the outer leaves as they soften. Set leaves aside.
  4. Heat butter in a skillet over medium heat, and cook and stir onion until softened and translucent, about 5 minutes. Stir together cooked onion, ground chicken, cooked rice, eggs, garlic, salt, pepper, and marjoram in a bowl.
  5. Place some of the meat mixture in the center of each cabbage leaf. Roll leaf and tuck ends in to enclose filling. Secure each roll with a toothpick if necessary. Place rolls into the prepared baking dish. Pour tomato sauce over the rolls.
  6. Bake, covered, in the preheated oven until the meat in the rolls is no longer pink, 45 to 60 minutes. An instant-read thermometer inserted into the center of the casserole should read at least 160 degrees F.

SOMETHING EXTRA

With school starting for many of our families, it is a great time to start implementing some healthy habits. Make a big batch of einkorn pancakes and freeze so that your school mornings are a bit easier by just reheating. Add beef snack sticks as their school snack to give them an extra boost of protein to make it through the day. Set up a yogurt parfait bar for the afternoons with options of granola. This little habits will go a long way with your family!
