๐ Ingredients (Serves 4)
- 1 lb lean Ground Turkey
- 6 large Pasture Raised Eggs
- 1 cup [Cottage Cheese](https://kakadoodle.com/shop?search=Cottage Cheese)
- ยฝ cup salsa (low sugar)
- ยฝ cup diced onion (optional)
- 1 cup spinach or zucchini (optional โ try fresh local greens!)
- ยฝ tsp garlic powder
- ยฝ tsp sea salt
- ยผ tsp black pepper
- Optional: ยฝ cup shredded mozzarella or local cheese
๐ฉโ๐ณ Instructions
- Preheat oven to 375ยฐF.
- Brown ground turkey in a skillet until fully cooked. Drain excess liquid.
- In a large bowl, whisk eggs and cottage cheese until mostly smooth.
- Stir in salsa, seasonings, veggies, and cooked turkey.
- Pour mixture into a greased 8x8 baking dish.
- Top with cheese if using.
- Bake 25โ30 minutes, until the center is set.
- Let cool 5โ10 minutes before slicing.
