🥣 Ingredients
- 2 cups almond flour or Einkorn Flour
- ½ cup Oat Flakes, blended into flour
- 1 cup low-fat Cottage Cheese
- ½ cup plain Yogurt or Greek-style yogurt
- 4 large Pasture Raised Eggs
- 2 scoops unflavored or savory protein powder (like Jocko Vanilla, Clean Simple Eatz Plain, or 1st Phorm Level-1)
- 2 tsp baking powder
- 2 tsp garlic powder or Italian seasoning (optional for savory flavor)
- ½ tsp salt
- 2 tsp Wild Branch Olive Oil or Cultured Butter (optional for richness)
🧑🍳 Instructions
- Preheat oven to 375°F and line a baking tray with parchment paper.
- In a medium bowl, whisk together eggs, yogurt, and cottage cheese until smooth.
- In another bowl, combine almond flour, oat flour, protein powder, baking powder, salt, and any seasonings.
- Mix wet and dry ingredients until a thick, drop-biscuit-style dough forms.
- Scoop into 12 portions on the baking tray.
- Bake for 15–17 minutes, or until golden and firm to the touch.
