- 4 Kakadoodle eggs

- 1 tbsp grated Parmesan
- 1/2 cup shredded part-skim mozzarella
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp baking powder
- Butter or avocado oil, for cooking

Prep the Zucchini
Grate zucchini and use a clean towel or cheesecloth to squeeze out as much moisture as possible. This helps the pancakes stay crisp and not soggy. -
