This Microgreen Salad with Lemon-Honey Vinaigrette is a simple, delicious way to enjoy them—packed with vibrant veggies, clean protein, and healthy fats to support energy, digestion, and overall wellness.


Ingredients

Salad Base


Protein Options (choose one)

Lemon Herb Chicken (≈50g protein)

Grass-Fed Steak (≈45–50g protein)


Simple Lemon-Honey Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • ½ tsp Dijon mustard (optional)
  • Salt & pepper to taste

Optional Upgrade

  • 1 tbsp yogurt for added protein

Instructions

  1. Prepare your protein:
    Grill or pan-sear your chicken (5–6 minutes per side) or steak (4–5 minutes per side). Let rest, then slice.

  2. Build the base:
    In a large bowl, toss together microgreens, tomatoes, cucumber, and carrots.

  3. Add toppings:
    Layer in avocado, seeds, and optional cheese.

  4. Dress it up:
    Whisk together dressing ingredients and drizzle over salad.

  5. Finish & serve:
    Top with your sliced protein and gently toss before serving.
