Truth is… most days, we just grab a handful and eat them straight like a crazy person. They’re that fresh, that flavorful, and that good for you. But when we’re feeling a little more proper (or, you know, around other people), we turn them into something like this beautiful, nutrient-packed salad.

This Microgreen Salad with Lemon-Honey Vinaigrette is a simple, delicious way to enjoy them—packed with vibrant veggies, clean protein, and healthy fats to support energy, digestion, and overall wellness.
Ingredients
Salad Base
- 3 cups mixed Basic Salad Mix Microgreens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- ½ cup shredded carrots
- 1 avocado, diced 🥑
- 2 tbsp sunflower or pumpkin seeds

Protein Options (choose one)
Lemon Herb Chicken (≈50g protein)
- 8 oz chicken breast (https://kakadoodle.com/shop?search=Breasts)
- 1 tbsp olive oil
- Juice of ½ lemon
- Garlic powder, salt & pepper
Grass-Fed Steak (≈45–50g protein)
- 8 oz flank or sirloin steak
- Salt, pepper & garlic powder
Simple Lemon-Honey Dressing
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- ½ tsp Dijon mustard (optional)
- Salt & pepper to taste
Optional Upgrade
- 1 tbsp yogurt for added protein
Instructions

Prepare your protein:
Grill or pan-sear your chicken (5–6 minutes per side) or steak (4–5 minutes per side). Let rest, then slice. -
Build the base:
In a large bowl, toss together microgreens, tomatoes, cucumber, and carrots. -
Add toppings:
Layer in avocado, seeds, and optional cheese. -
Dress it up:
Whisk together dressing ingredients and drizzle over salad. -
Finish & serve:
Top with your sliced protein and gently toss before serving.
