Simple Roasted Pork Shoulder This easy recipe, courtesy of The Food Network allows you to truly enjoy the flavors that you get from our Heritage Berkshire Pork.

  1. Preheat the oven to 425 degrees F.
  2. In a small bowl, mix together the olive oil, garlic, salt and pepper. Using a pastry brush, spread the mixture all over the pork shoulder.
  3. Set the meat on a rack set into a roasting pan. Roast for 20 minutes, and then reduce the heat to 325 degrees F. Continue to cook until an instant-read thermometer inserted into the shoulder reads 185 degrees F, about 4 hours. Remove the pork from the oven and let stand until cool enough to handle, about 30 minutes.

Fermented Garlic Honey

In farming, we are always looking ahead. Thatโ€™s why we planted over 100 lbs. of garlic this past fall. Since we donโ€™t believe in waste, we used some of the extra pieces to make fermented garlic honey. Fermented honey is believed to have potential health benefits โ€“ which is perfect to have on hand during the winter months. The fermentation introduces beneficial bacteria, similar to those found in probiotics, which can positively impact gut health. This natural probiotic boost may contribute to improved digestion and overall well-being.

Simply fill a mason jar with peeled garlic cloves and pour raw honey, making sure the cloves are fully submerged. Seal the jar tight and let it sit at room temperature. Every day or so for the first week, you will want to open the lid to โ€œburbโ€ it. After a month, it will be ready for you to use the honey or consume a clove or two. Itโ€™s even great for marinating your Heritage Berkshire Boneless Pork Chops.
