As the seasons change and hearty greens flourish, there's no better time to enjoy the earthy, vibrant flavors of our Wild Kale Harvest Salad. This dish is a celebration of local, chemical-free ingredients—nourishing your body with every crunchy, colorful bite. Featuring Kakadoodle’s Kale, Radish, and optional Chèvre Frais Goat Cheese, this salad makes a perfect lunch, side, or light dinner that honors both your health and our planet.

🥗 Ingredients (4 servings)

  • 6 cups wild or curly kale, finely chopped
  • 1 small apple, diced
  • 2 tbsp low-sugar dried cranberries
  • 1 cup roasted butternut squash, cubed
  • 1 cup cucumbers, sliced
  • 4 radishes, thinly sliced
  • 2–4 tbsp goat cheese (optional on the side)
  • 2 tbsp pumpkin or sunflower seeds (optional)
  • 1 cup cooked rice OR 1 cup cooked farro (cooled)

🍋 Low-Sugar Lemon Vinegar Dressing

  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1½ tbsp extra-virgin olive oil
  • ½ tsp Dijon mustard
  • Salt + pepper to taste
  • Optional: ½–1 tsp monk fruit for light sweetness

👩‍🍳 Instructions

  1. Massage chopped kale with a few drops of olive oil until tender and slightly wilted.
  2. Add diced apples, cucumbers, sliced radishes, cranberries, and roasted squash.
  3. Stir in cooked wild rice or farro.
  4. In a small bowl, whisk together all dressing ingredients.
  5. Pour dressing over the salad and toss gently to combine.
  6. Sprinkle goat cheese on top or serve on the side.
  7. Add seeds for extra crunch if desired.
