Who knew you could enjoy a chewy, golden bagel packed with protein and free from unnecessary additivesβall while supporting local farms? These Cottage Cheese Everything Bagels are made with wholesome, sustainable ingredients that keep your body fueled and your taste buds happy. Perfect for breakfast, lunch, or a hearty snack!
Ingredients (makes ~6 bagels)
- 2 cups Cottage Cheese (blended smooth)
- 1 cup Almond Flour
- 1 cup Organic All-Purpose Flour or Einkorn Flour
- 2 large Kakadoodle Pasture Raised Eggs
- 1Β½ tsp baking powder
- Β½ tsp salt
- 1 Tbsp everything bagel seasoning (plus extra for topping)
- 1 Tbsp Wild Branch Olive Oil (for brushing before baking)
Directions
- Preheat oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
- Blend the cottage cheese until smooth. In a bowl, whisk the Kakadoodle eggs, then stir in cottage cheese.
- Add almond flour, organic or Einkorn flour, baking powder, salt, and bagel seasoning. Mix until just combined (do not overmix).
- Divide the dough into 6 equal portions. Shape into rounds and poke a hole in the center to form bagels.
- Place on baking sheet. Brush tops with Wild Branch Olive Oil and sprinkle with extra bagel seasoning.
- Bake for 22β25 minutes, until golden brown.
- Cool slightly before serving.
