🌿 Ingredients
Marinated Chicken:
- 1.5–2 lb Kakadoodle Chicken Breasts, cut into chunks
- 1/4 cup Plain Yogurt
- 1 tbsp Wild Branch Olive Oil
- 1 tbsp Local Honey
- 1 tsp Dijon mustard
- 1/2 tsp sea salt
- 1/2 tsp ground cinnamon
Bowl Add-ins:
- 2 medium sweet potatoes, peeled and cubed
- 1 red onion, sliced
- 2 small zucchini, chopped
- 2 tsp Olive Oil
- Sea salt to taste
Toppings:
- 1/2 cup plain tzatziki yogurt sauce (store-bought or homemade)
- Optional: fresh dill, lemon wedges
🍲 Instructions
1. Marinate the Chicken
In a bowl, whisk together Greek yogurt, Olive Oil, Local Honey, Dijon mustard, sea salt, and cinnamon. Add chicken chunks and coat thoroughly. Cover and marinate for at least 30 minutes, or overnight in the fridge for deeper flavor.
2. Roast the Veggies
Preheat oven to 425°F. On a sheet pan, toss sweet potatoes, red onion, and zucchini with olive oil and sea salt. Spread evenly and roast for 25–30 minutes or until golden and tender.
3. Cook the Chicken
Heat a skillet over medium-high heat. Add marinated chicken and cook for 5–7 minutes per side until cooked through and nicely browned.
4. Assemble the Bowls
Divide roasted vegetables and chicken evenly into 4 bowls. Top with a drizzle of tzatziki and garnish with fresh dill or lemon wedges if desired.
