Janie's Mill

Ashkum, IL

Janie’s Mill began when lifelong Illinois farmer Harold Wilken realized his organic grain shouldn’t be shipped off and lost in the commodity system — it should be used locally. In 2017 he built the stone mill on his family farm and named it after his daughter Janie, honoring the hope that real food can bring people together. Today, Harold and his team slowly stone-mill the whole kernel — bran, germ, and endosperm — to preserve the rich flavor and nutrients that industrial milling strips away. Nearly all of the grain comes from Harold’s own fields or neighboring organic farms, creating a true local loop grounded in soil health, family, and food with integrity.
